💚 What is a green onion?
Scallions are also called green onions and belong to the onion family, which includes onions, shallots and garlic. They are most closely related to chives and spring onions.
This crunchy, green vegetable is a staple in many kitchens around the world.
They have a mild taste, which makes them perfect for consumption raw or cooked. Spring onions are most often used in salads, soups, fries and as a side dish.
Young onions have a distinctly green tip that turns white-green and then ends with a white bulb.
The taste of the green tips is much milder than the taste of the white part of the scallions and has a more intense taste, although it is still milder than regular onions.

How are green onions different from chives, scallions and scallions?
Green onions and scallions are the same thing, and the name for them varies depending on the region where you live.
shallotare thinner green leaves that are hollow and look more tender than scallions because they are much smaller. Their flavor is also mild and can be used as a side dish or in sauces, dressings and dips.
spring onionThese are actually young onions that are harvested early, before the onion is actually formed. They are similar to green onions, but have a slightly stronger flavor than scallions.
They differ in flavor intensity, but can be used interchangeably in recipes. You can find scallions at your local grocery store or market.
🫙How to store spring onions
The storage method changes slightly depending on whether you want to store them whole or sliced. Here are my top tips.
A whole spring onion
If you come home with a bunch of onions, there are two different ways to store them to keep them fresher for longer.
- Keep them in a glass of waterr with enough water to cover the onion. This is not always practical due to limited fridge space.

- Wrap the end of the lampDry the entire bunch of scallions with a damp paper towel or cheesecloth. After wrapping, cover with a plastic bag and store in the refrigerator.

If stored properly, whole scallions can be kept for up to a week after you bring them home from the store.
Cut out
After slicing the scallions (white or green part), store them in an airtight container in the refrigerator for up to 3-4 days.
freezer
You can also freeze spring onions.Once frozen, they are best used to flavor soups, stews or sauces as they lose some of their consistency when frozen.
Before freezing, wash them thoroughly and let them dry completely.
When freezing, I recommend chopping the greens before freezing. The white ends are easy to freeze intact. Frozen ones can be easily chopped and added to a pot of soup.
Can I grow spring onions again?
Yes you can! I love doing this! This is a great way to reduce food waste and avoid buying spring onions for a few weeks.
It works best when spring onions have visible roots.
- Cut them outwhere they are white and green, yielding about a 3-4 inch piece of scallion.
- accommodate themplace in a glass with water at the bottom to cover the root end.
- Place a glass or jarin a cool place where they are exposed to indirect sunlight.
The green tips will grow back. It won't last forever, but it will give you scallions that will last at least a few weeks.
How to clean green onions
It is important to wash the spring onions well before chopping and using them.
You can submerge them in water or just pour water over them in all directions, including the top down, to catch any dirt that might be hiding at the base of the green.
After washing, leave them to dry on a mat or towel. Once they are dry, you can start chopping them up for your dish.
How to cut green onions for cooking

cut the minced meat
This cut is similar to a simple straight cut and can be done with both the white and green parts of the onion. The only difference is that when you chop the scallions, you want to cut them into much smaller, thinner pieces.

If you're looking for a more decorative cut to garnish your dish, here are two easy options! They look great, but are actually quite easy to trim.
First, wash the fresh spring onions you want to use and let them dry well.
thin stripes
- Cut out the greensat the point where they change from green to green-white.
